Eggplant Fries
Make these quick and easy Eggplant to satisfy your cravings with a low carb option
I used the smaller Indian eggplant for this recipe and it was easier to slice. However, you can use any type of eggplant for this recipe.
Ingredients
- 5-6 Small Eggplants, sliced in wedges as thin as possible
- Salt (to taste)
- Chill Powder (a sprinkle)
- Tumeric (a sprinkle)
- Coriander powder (a sprinkle)
Directions
- Slice the eggplants and mix all the seasoning in. You don’t want to add too much. Just enough to get some flavor in.
- Let sit 20 minutes or more.
- Heat a thin layer of oil in a skillet. Fry them. Turn as needed and take out once it browns.
